Kyoto’s famous “Tori Tonkotsu Ramen” (Chicken and pork bone broth Ramen)
“Kyoto’s pork bone ramen cooked in chicken stock is rich in flavor and is highly popular! However, you may hesitate to try this dish for concerns of possibly having to deal with a stomach ache due to the oil and strong flavors. For any concerns you may have, we would love to introduce our own Tori Tonkotsu Ramen (Chicken and pork bone broth Ramen).
After much trial and error, we have reached the perfect balance of rich flavors with an elegant, clean aftertaste.
For our Chicken and savory Pork Bone W Soup (Niwatori to Butahone Noukou W Soup), we use 130 kilograms of chicken and pork bones in order to make a single batch of soup. We simmer the bones over high heat for 8 hours. We take the time to carefully scoop out the lye or scum and wipe off the outside of the pot clean.
The careful and thorough cooking results in a thick broth that has no animal smell, leaving only the full delicious flavors of pork and chicken. The policy we adhered to since the establishment of the company is “eliminating umami seasonings as much as possible”. By only using simple ingredients we are able to attain a rich, yet soft after tasting soup that does not leave you with a queasy feeling.
When I was a little child, my parents took me to a ramen shop. I still remember the ramen we had as a family. Although the restaurant only served soy sauce ramen and fried rice, the food was and is loved by a wide range of people from small children to the elderly all over Japan.
The ramen we serve here at (Ramen Yo Wa Mata Noboru) may become a special memory that will last a lifetime. Our mission is to make this a reality for you and serve the best ramen we can.

Our commitment for homemade ramen noodles since the establishment of the company
We offer freshly made ramen dishes such as, “Tori Tonkotsu ” made by carefully simmering pork bones in chicken stock for a long time.
Using brewed soy sauce, smoked tuna flakes served with our chicken stock, we can make what becomes a delicate “Shoyu Ramen”. It is a delicious staple of our own restaurant.
Here at Ramen Yo Wa Mata Noboru, we are committed to making the most delicious bowl of ramen with the two thoughts of “valuing the original taste of the ingredients” and “making sure that even small children can eat and enjoy our ramen.”
Without the use of artificial flavors and seasonings, we are proud to serve our original homemade rice noodles, and our popular gyoza sets.

Wagyu Shoyu Ramen
Please enjoy our rich broth made from a combination of beef bone soup and Soy sauce from Okanao Saburo Shouten! Spread throughout the bowl is tender Wagyu meat that will just melt in your mouth.
